At this place where I live (Kuala Lumpur), there's this shop called Wondermilk which sells magnificent cupcakes; just sweet enough for me yet not too sweet. It's just right and I love it that way. They have marvellous drinks (milk + cordials) and also sandwiches and such. I usually have lunch there when I am around that area and their jacket potatoes are so yummy. I decided to try it on my own and it tasted just like it!
What you're gonna need :
a medium potato (Russet/US), try to buy a cylindrical one (not a distorted one)
Heinz mayonnaise
a handful of chopped parsley
lean bacon, sliced thinly
beef ham, sliced thinly
So, fry the bacon and ham. Clean the potato properly so that you can have the skin as well later on.
Bake the potato at say 180 degrees Celsius till it is soft when you poke it. I think that will be about 10-15 minutes long of baking.
Cut the potato into half but make sure that it is able to open like a book, so don't CHOP IT INTO HALF!
add the bacon and ham in the middle of the two halves of potato, squirt the mayonnaise on top and sprinkle with parsley. Simple as that.
